Gas is dangerous inside the boat but provided you are carefull, have professional to inspect the system annually and keep all the gas devices in top condition, you can then cook like a professional cook onboard. The benefit of diesel stoves and heaters is that you most probably have a diesel engine and then you are already carrying enough diesel also for your everyday cooking and heating needs. Paraffin is becoming more rare but there are places for use that especially if your boat runs with gasoline or won't have engine at all. Modern day yachts have enought electrical power thanks to solar cells and huge battery banks so you can even use electric barbecue grill or stove onboard.
